Rinse and dry your potatoes.
Pierce with a fork to keep potatoes from cracking in the microwave.
Cook potatoes in the microwave. Most microwaves have a potato setting.
Remove from the microwave.
Slice potatoes once long ways down the middle to get two halves.
Place all potato centers in a medium-mixing bowl.
Add melted butter, parsley and dry ingredients.
Using a fork or potato masher mix potatoes until smooth and mixed well together.
Distribute filling equally into potato skins.
Place onto an ungreased baking sheet.
Preheat the oven to 400F.
Place into the oven on the middle rack.
Bake for 20 - 25 minutes or until potatoes are hot in center (check with toothpick) and browned on top.
Remove the baking sheet from the oven.
Refrigerate leftovers immediately in an airtight container for up to 5 days.
