One-Pot Cheesy Chicken Broccoli Pasta

Trying not to be barred by personal opinion or anything but there is no better way to cook than a simple and wonderful One-Pot recipe. When we are able to cut corners on prep times, instructions and most importantly dishes then everyone is a winner.
I was inspired to make this while looking for an easy meal to throw together while keeping the wife happy. She is a huge fan of broccoli and cheese (mainly) so I put together this One-Pot cheesy pasta skillet. Fresh flavors and colors mingle together gracefully. Buy pre cut broccoli florets and shredded cheese to save on prep time.

- Cutting Board

Grocery List
- 2 medium chicken breast
- 6-8 ounces fresh uncooked broccoli florets
- 8 ounces dry pasta
- 2 cups shredded cheddar cheese
- 1½ cup water
- ½ cup heavy whipping cream
- 1 tablespoon vegetable or canola oil
- ½ tablespoon chicken bullion
- ½ teaspoon Morton’s Nature’s Seasoning
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Instructions
- Cut chicken into 1-inch pieces and place into mixing bowl.
- Add Morton’s Nature’s Seasoning, garlic powder, onion powder, salt and black pepper to chicken.
- Toss to evenly coat chicken with seasonings.
- Turn stove to medium-high and add oil to pan.
- Once pan and oil are hot add seasoned chicken to the pan.
- Cook for 8-12 minutes until chicken is fully cooked and no longer pink in the middle.
- Toss in broccoli florets, dry pasta, chicken bouillon and water.
- Stir; then bring to a boil. Reduce heat to medium-low and cover tightly.
- Let simmer stirring occasionally for about 10-15 minutes or until pasta and broccoli are al dente and just about fully cooked.
- Once nearly all the water have been absorbed add the heavy whipping cream and shredded cheese. Add cheese a handful at a time so it is easy to stir.
- Mix well until the cheese is blended and melted entirely.
- Cover tightly and let simmer on low heat for an additional 3-5 minutes stirring occasionally.
- Remove from heat, stir and serve. Cover and refrigerate any leftovers immediately.
Serving Suggestion
- Dice tomato or for an Italian tweak check out our Banging Bruschetta recipe and top your dish with some fantastic bruschetta. Sprinkle with Parmesan cheese.
- Use a saucepan and lid that are oven safe and toss a ¼ cup of breadcrumbs or your favorite chips on your finished pasta skillet. Put in oven for 2 minutes (or until browned) on broil for crunchy topping on your skillet pasta.
