Half-Baked Potatoes

This half-baked potato recipe cuts the traditional recipe time of twice baked potatoes down by nearly an hour. Easy to double or triple if you need sides for a couple of extra guests at the dinner table. You can always add any of your favorite potato toppings to make your own  half-baked potatoes.

  1. Mixing Bowl
  2. Baking Sheet
  3. Measuring spoons
  4. Measuring cup
  5. Spoon

  7. Potato Masher (Optional)
Grocery List
  1. 2 large baking potatoes
  2. 4 tablespoons butter (melted)
  3. ½ teaspoon parsley (fresh or dried)
  4. paprika (to garnish potatoes before baking)
  5. ½ teaspoon garlic powder
  6. ½ teaspoon Morton’s Natures Seasoning
  7. ¼ teaspoon salt
  8. ¼ teaspoon black pepper
Ingredients for flavored potato
  1. *Cheese and Bacon Potato
  2. ½ cup shredded cheese
  3. ¼ cup bacon bits
  4. *Sour Cream and Chive
  5. 2 tablespoons sour cream
  6. 2 tablespoons chopped chives (green onions/scallions)
  7. *Fully Loaded
  8. ½ cup shredded cheese
  9. ¼ cup bacon bits

  11. 2 tablespoon chives or scallions (chopped)
Instructions
  1. Rinse and dry your potatoes. Pierce with fork to keep potatoes from cracking in microwave.
  2. Place potatoes into microwave. Most microwaves have a potato setting.
  3. If you don’t have one here is the general rule of thumb for potatoes in the microwave;
  4. 6 - 7 minutes for 1 potato 9 - 11 minutes for 2. Although cooking times may vary from unit to unit.
  5. Flip once during cooking. Remove from microwave carefully as they will be hot.
  6. Slice potatoes once long ways down the middle to get two halves. Let cool for 10 – 15 minutes.
  7. The hardest part of making this dish is scooping out potato without breaking the skins.
  8. Remove soft center of potatoes with spoon carefully.
  9. Leave enough potato (1/4 inch) inside not to puncture the skins making little bowls.
  10. Place all of potato centers in a medium-mixing bowl. Add melted butter, parsley and dry ingredients.
  11. Using a fork or potato masher mix potatoes until smooth and mixed well together. At this point your filling is ready.
  12. If making a flavored potatoes add the required ingredients now and mix well into the potato filling. (See grocery list)
  13. Distribute filling equally into potato boats.
  14. Once the potato boats have been filled generously sprinkle paprika over tops of potatoes.
  15. Place onto ungreased baking sheet. Preheat the oven to 400F.
  16. Place pan with potato skins into the oven on the middle rack.
  17. Bake 20 - 25 minutes or until potatoes are hot in center (check with toothpick) and browned on top.
  18. Remove baking sheet from oven. Garnish and serve immediately. Potatoes will be very hot.
  19. Refrigerate any leftovers immediately.
